Jollof Rice – The Well-known Ghanaian Rice Dish

Ghana is a rustic located on the west coast of Africa. It was previously a British colony and was often known as the Gold Coast due to gold being considered one of its pure useful resource. Ghanaian delicacies is scrumptious and flavorful and one of many dishes that’s all the time talked about when one talks of Ghanaian delicacies is Jollof rice. There are numerous strategies of cooking Jollof and beneath is a recipe from my cookbook “Akwaaba: A Style of Ghana”:

Elements:

* 1 can (29 oz) tomato sauce or eight medium tomatoes
* 2 medium-sized onions
* 1 orange habanero pepper
* small-sized ginger root (see pic)
* 1/four cup of vegetable oil
* 1 tspn of nutmeg powder
* 1 can of corned beef
* 1 Maggi dice
* three cups of basmati / jasmine rice
* 2 tbsns of salt

Instructions:

* Wash and peel onions; cube one of many onions
* Place the opposite onion in a blender, add ginger, pepper and tomato sauce and mix properly
* Warmth oil in a cooking pot, on medium warmth
* Add diced onions and let simmer for three minutes
* Add nutmeg and let simmer for 1 minute
* Pour in blended tomato combine
* Let sauce cook dinner on medium warmth for 20 minutes
* Mash Maggi cubes and add to cooking pot after 10 minutes of simmering
* After the 20 minutes, add and stir within the corned beef till it’s evenly combined into the sauce
* Let the sauce cook dinner for one more 20 minutes
* Add salt
* Wash the rice (twice) and add into the cooking sauce
* Stir properly till all of the rice is totally combined in with the sauce
* Let the “Jollof” cook dinner for about 45 minutes on low warmth
* Stir each 15 minutes so all of the rice cooks evenly
